Read the three numbers of EN 511
The first number is about convective cold, so cold air around you; the second is about contact cold, holding something cold; the third is waterproofness and is 0 or 1. If you work in a freezer warehouse handling boxes, that second number is decisive. If you work outdoors in the wind, the first counts more heavily.
Staying dry is staying warm
Moisture is insulation's biggest enemy, whether that's rain or sweat. Choose a waterproof version for wet work and take a size that leaves room for a thin glove liner: a tight glove restricts circulation and actually makes your hands colder. For the rest of the gear, check out thermal clothing.
